Learn how to prepare a Mediterranean Couscous Salad

Our Executive Chef is pleased to share the secrets of one of our bestselling dishes on the Seven Seas Food Festival menu: The Mediterranean Couscous Salad.

Get your ingredients ready:

• 1.5 oz Baby Spinach
• 3 oz Cooked Couscous
• 2 oz Feta Cheese
• 4 Kalamata Olives
• .25 oz Sweet Red Onions
• .25 oz Red Peppers
• 1 tbsp Honey
• 1 tbsp White Balsamic Vinaigrette
• 2 tbsp Olive Oil
• Salt and Pepper to taste

Instructions:

1. In a large bowl, mix the Baby Spinach, Couscous, Feta Cheese, Olives, Sweet Red Onions and Red Peppers. Poor the honey on top of all ingredients followed by the White Balsamic Vinaigrette and Olive Oil.
2. With a pair of tongs mix all ingredients and stir to spread the dressing. Lastly, add salt and pepper to taste before serving.
3. Voila! There you have a delicious and refreshing Mediterranean Couscous Salad.
