DIY: Goat Cheese Croquettes with Local Honey and Thyme

Need to bring some of the flavor home? Put on your apron and head to the kitchen with our delicious Goat Cheese Croquette recipe. This is one of my favorite dishes the festival -- it's both savory and sweet, and we've resized the recipe down to be the perfect appetizer for your next family meal!
Goat Cheese Croquettes
Yields 23 Croquettes
Goat Cheese Croquettes Mix Ingredients
2 Pounds, 8 Ounces Goat Cheese
1 Pound Cream Cheese
6 Egg Yolks
1 Cup Buttermilk
1/2 Cup Garlic Powder
1/2 Cup Onion Powder
1/2 Cup Salt
1/2 Cup Black Ground Pepper
1/2 Cup Freshly Chopped Thyme
Directions
- Combine all ingredients in a large mixing bowl and mix until well combined
- Spread the mixture out in to a 2" sheet pan
- Refrigerate until completely chilled and set
Seasoned Flour Ingredients
2 Quarts Flour
1/2 Cup Salt
1/2 Cup Black Ground Pepper
Egg Wash Ingredients
1 Quart, 1 Pint Eggs
1 Pint Buttermilk
1/2 Cup Salt
1/2 Cup Black Ground Pepper
Seasoned Breadcrumbs Ingredients
1 Quart, 1 Pint Panko
1 Pint Italian Breadcrumbs
1 Pint Grated Romano or Parmesan
1/2 Cup Salt
1/2 Cup Black Ground Pepper
1/4 Cup Garlic Powder
1/2 Cup Onion Powder
1 Cup Dry Thyme
It's time to assemble your croquettes!
Directions
- Prepare a sheet with parchment and sprinkle with seasoned breadcrumbs mix
- Using a 1½-oz. scoop, ball and roll the goat cheese mix onto the prepped pan
- Freeze to set for at least 1 hour
- Coat the goat cheese balls in the seasoned flour and shark off excess
- Coat the goat cheese balls with the egg wash using a basting brush
- Coat the goat cheese balls with the seasoned breadcrumbs
- Line onto a sheet and freeze until ready to use

Directions
- Preheat the fryer to 350 degrees.
- Carefully place the croquettes into the fryer and cook for about 6 minutes until golden crisp
- Remove from the oil and lightly shake off excess fat, place in a bowl and season with salt to taste
- Plate and drizzle with local honey, garnish with thyme or herb sprigs, and serve immediately
