The Grilled Cheese Pound Cake has quickly become the ‘cannot miss’ dessert at Seven Seas Food Festival at the Pacific Coast Market. The combination of white cheddar cheese, decadent pound cake and a fresh raspberry sauce will satisfy all of your cravings in one sweet treat.
Grilled Cheese Pound Cake with Cheddar Cheese and Raspberry Sauce
4 oz. pre-made pound cake
2 slices white cheddar cheese (approximately 1 oz. each)
1 tablespoon butter
1 pint fresh raspberries
2 tablespoons raspberry preserves
2 tablespoons sugar
In a small bowl, blend fresh raspberries, preserves, and sugar until smooth and set aside. Bring a hot griddle or pan up to medium-high heat and melt 1 tbsp. butter on the surface. Slice pound cake into 4 slices each approx. 3/4" thick. Once the butter has melted, place one piece of pound cake on the griddle, then layer with one slice of white cheddar cheese and finish the sandwich by adding the second pound cake slice. Cook until golden brown, approximately 3-4 minutes each side. Serve with raspberry sauce spooned over completed sandwich.
